Any recommendations are what I type o grease to use for the rolling bearings in these?

General purpose wheel bearing grease is fine.
The red kind is a little better than green.
The outside of the eccentric where it is clamped by the pinch bolt does not necessarily need grease. I run mine dry with no problems. It only needs to rotate a little when you adjust the chain tension.-I'm sorry....I did not know she was your sister.
-If Buckleys cold mixture went rancid......how would anybody know????
