Yeah, I love my Ventura rack, too. It wasn't cheap, together the two components ran about $140, but it's way, WAY better than trying to bungee stuff to the rear of the bike. There's nothing back there to keep it from sliding around, which means you have to bungee it down so tight that you end up scratching/scuffing the rear cowl.
As for side panniers, perhaps you could weld something onto the Ventura side bars? My Dad did something very similar on his W650 with his Ventura rack.
